The top restaurant on last year’s World’s 50 Best Restaurants list was Central, a distinctively Peruvian restaurant in Lima and inventive Peruvian restaurants are popping up in cities all over Canada and the United States. Calgary is still catching up — we have a couple of good Peruvian restaurants in town, but we’ve long been lacking an inner-city take on modern Peruvian fare.
